Dazzling Dining
Rome’s first and only three-star Michelin restaurant, La Pergola, will offer two distinctly dazzling culinary journeys, with imaginative, multi-course menus by world-renowned Chef Heinz Beck and wine pairings—from the restaurant’s award-winning cellar (rumored to be Italy’s largest) of more than 75,000 bottles—by Master Sommelier Marco Reitano.

The festivities begin on Christmas Eve with an eight-course ode to the traditional Feast of the Seven Fishes, showcasing dishes like marinated amberjack with celeriac in seawater and oxidized apple, and turbot with pumpkin and sage. On Christmas Day, Chef Beck presents another eight-course extravaganza, serving up a scampo among tubers and roots and fillet of venison on chestnut cream with oxidized chocolate (each dinner: €550 per person). A pianist will play holiday favorites against the singular backdrop of the sumptuously decorated dining room, which offers show-stopping city views and rarefied touches like hand-blown glass by French Art Nouveau phenom, Émile Gallé.
Alternatively, guests can indulge in a five-course Christmas Eve dinner with wine pairings at Uliveto, the hotel’s inspired Roman eatery. The meal kicks off with an array of seafood delicacies from Chef Fabio Boschero, followed by courses including tagliolini pasta with red prawns and pesto, baked sea bass with parsnip foam and mushrooms, and truffled veal shoulder with buttered spinach (€110 per person). The celebration continues on Christmas Day, when the Franciacorta will flow at Uliveto’s storied Sunday Brunch in the Garden Lobby, a favorite go-to for in-the-know Romans. Highlights include a smorgasbord of sweet and savory delicacies, live music, and activities for little ones, including an appearance by Santa Claus himself to deliver gifts on his sleigh (€180 per adult, €80 per child).
Tea & Tipples
The Tiepolo Lounge & Terrace will play host to a special tea experience over the holidays.
From December 24, 2022, to January 6, 2023, Tiepolo Lounge & Terrace will present a special early-evening holiday Tea with Tiepolo experience (€38 per person) paired with festive pastries by Pastry Chef Dario Nuti. Tipplers can also sip a festive aperitivo, including a “Negroni…in a Blue Dress”—a spirited mix of London N°1 Gin, vermouth, Italicus Rosolio di Bergamotto, and notes of grapefruit.
Grand New Year’s Festivities
Rome-loving revelers can also ring in the New Year in lavish fashion with two more gourmet experiences. La Pergola will host its Grand Gala, an exquisite nine-course meal with wine and champagne pairings, featuring dishes like scallop with pumpkin, almonds, and caviar, and pigeon with beetroot, hazelnuts, and black truffles. Accompaniments will include live music and spectacular fireworks (€1,450 per person).
Meanwhile, Uliveto’s five-course Gala Dinner—which also includes buffets of both aperitivi and desserts—will wow diners with dishes like Champagne risotto with prawn tartare and seaweed pearl, and Roe deer fillet in cereal crust on a Jerusalem artichoke puree. At midnight, guests can sample the Italian tradition of lentils and cotechino—pork sausage—symbolizing health and good fortune for the year ahead (€390 per person).

For a lighter option, Tiepolo Lounge & Terrace will host a Blue Bubbles celebration, featuring a bottle of Moët & Chandon Nectar Impérial and an array of petit fours and canapés (€180 per person), with the option to add a sushi grand selection (€70 per person). The evening culminates with a New Year’s Eve with a View party at the rooftop Terrazza Degli Aranci, serving a Moët & Chandon grand dessert buffet and a fireworks show (€190 per person). The festivities conclude on New Year’s Day with a traditional Italian-style Sunday Brunch in the Garden Lobby, with more activities and games for kiddos (€155 per adult, €70 per child).

As a rejuvenating holiday ritual, the award-winning Cavalieri Grand Spa Club will present Festivity Glow, a unique experience in collaboration with new partner Natura Bissé. To begin 2023 with a blissful bang, the spa will offer a signature Caviar Lifting and Firming Facial by partner La Prairie on New Year’s Eve & Day.
